Zucchini Chocolate Chip Cookies

MilkZuchCookiesBI’m in the middle of reading Animal Vegetable Miracle by Barbara Kingsolver. I’ve enjoyed many of Barbara’s books over the years and find myself engrossed in this one. If  you’re a foodie, care where your food comes from and have a hankering to grow your own veggies, this is the book for you. If you don’t, well you should  read it anyway. It’s really that good.

Now, Barbara’s daughter Camille loves to cook and she shares some really tasty recipes in the book using food they’ve either grown, raised or purchased locally. This particular recipe for Zucchini Chocolate Chip Cookies was one I had to try and try right now. See, my CSA is overflowing with zucchini. I love it, but everyone in my family is getting a bit tired of it. So, I’m working to come up with creative ways to use it. Zucchini bread is a fave – I bake and freeze for mid-winter goodness. But zucchini chocolate chip cookies? Really? 

I was curious enough (and craving chocolate enough) to deal with a hot kitchen (it was 103 outside) to find out what they tasted like. With only basic ingredients, this easy to make recipe is located on the website Animalvegetablemiracle.org where you’ll find all the recipes in the book. It’s in a pdf format so be sure you’ve downloaded Acrobat reader (it’s free). 

The results were fabulous. Granted, they’re not Toll House, however they are tasty. You don’t taste the zucchini at all making it perfect for veggie-aphobia kids. My 11 year old and his friend gave them a thumbs up and grabbed a handful on their way out to play. My husband mentioned they were light and cakey and smiled as he gobbled a few more. Excellent!  This is the sort of recipe that you can sneak in a bit of nutrition and everyone is happy.

Tip: if you have super persnickety kids who don’t like anything ‘green’, simply grate or chope your zucchini super fine. They’ll never know it’s in there.

I think my most favorite tip of the show is to learn a new skill like preparing a raw food meal. I can see many of you pulling back from your monitor, scrunching your face and saying “what is she thinking?” Well…… I’m working to embrace new things and new ways of eating. I’m also working to lose a few pounds and eating raw foods is a darn good place to start. An added bonus is that true raw food recipes don’t require heating up your house (or your grill) to prepare. That keeps your AC unit from working overtime.

Here’s the deal. We’re not talking a simple veggie platter here but rather dishes that integrate raw foods into them. Some of you may profess to eating a true raw food diet where nothing is heated above 116 degrees Farenheit. I’m not quite that diligent. However, I do believe that including raw food dishes into your daily routine can help improve nutrition, health and overall well being. So, what sort of raw food recipes am I talking about? Here are a few to get your brains a thinkin’:  Tomato Cups made from the onslaught of tomatoes that are about to hit your garden, crunchie taco made from avocados and lettuce, and Butternut Squash Soup made with butternut squash and mangoes. Yum.

Now, as I said before, I have no interest in giving up my carnivore status any time soon. But, I will say that I have been working to integrate smaller portions of higher quality meat into my diet while increasing veggies, whole grains like Quinoa and more beans (sorry, honey). Why? I’m 42 and would  like to age gracefully. A good healthy diet will help. I think.

In mid-June, Val and I will celebrate the 4th anniversary of our eco-funny podcast, “More Hip Than Hippie“.  It started as most great things do, over a few beers on a warm spring evening.  Val’s hubby Rob came up with this avant-garde idea: combine Val’s eco-expertise with my mad broadcasting skillz to create an informative, entertaining show while spreading the good word about green living.  Val came up with our handle; I scrawled the lyrics to our infamous theme song, which my friend Tim reluctantly performed.  The result was, as we like to call it, “podcast gold”!

Last week I listened to good ol’ Episode 1 for the first time since we released it in 2005.  I have to admit, I expected the worst…nervous patter, uncomfortable silences, amateurish editing…but you know what?  We weren’t half bad!  After I introduced us as “a couple of middle-aged moms” (to Val’s chagrin), we were bold enough to conduct a 2-on-2 interview.  All this, without the benefit of beer and chocolate!  How did that get started, anyway?  Guess I’d better listen to more old shows.

You’re invited to tune in to our 4th anniversary celebration show on June 17th.  Ale will be drunk, dark chocolate devoured, high fives slapped.  I will prepare one of my dreaded quizzes while Val puts together a generous package of Greenfeet prizes.  We might even make cheese.  Hey, not bad for a couple of middle aged moms!  (Sorry Val.)

A Modern Day Greenie - It's All About Choices

Last weekend, I was enjoying a cold one with my girlfriend in my front yard discussing all things ‘green’.  Over smelling lilacs and admiring poppies, the conversation turned to questions about my commitment to an eco-friendly lifestyle. I was explaining how living sustainably involves making choices and at times, that means choosing to settle for the next best thing.  I remembered a situation I had written about 5 years ago involving whether or not to replace our second car that had been deemed terminal. It illustrates the struggle that even us long-time ‘modern greenies’ go through.  I thought it appropriate to re-post in honor of Earth Month:

Living a sustainable lifestlye, for the most part, has been pretty darn easy. The decision to switch to biodegradable, non-toxic cleaners was easy. Choosing natural personal care products – a snap. Kicking up recycling and reducing my need for stuff? Relatively simple. But a recent situation proved to be the greatest challenge of all; giving up the second car.

The Bad News:

The day is etched in my mind – it was a Tuesday. Our mechanic, Eric, called with the bad news; it was terminal. While my husband and I pondered where to lay old Betsy to rest, it hit us that we were down to one set of wheels. We are definitely a two car family. Our offices are over 15 miles apart and schedules are hectic. Our son needs to get from points A to B (and C, D and E depending on the week). My husband has softball and I have meetings. How are we going to make this sudden change work? Granted, we’d been limping along with one car for the last week but could we sustain it?

Living a green lifestyle does not imply it’s an all (read: Perfect) or nothing endeavor. Oh, quite contrare. Living a more ‘green’, or as I prefer to call it, ’sustainable’ lifestyle simply means being mindful of your choices.

Mindfulness often involves reframing, rethinking and reevaluating how we go about our daily lives. Being mindful means questioning the status quo. It means going beyond black, white and gray solutions. It means the deliberate act of: stop, think, question and decide on a solution that works for you.
